A trip to the farmers market yesterday has revealed a glimpse of summer. Creole tomatoes are starting to show their bright red faces, big beautiful cucumbers are here and plenty of colorful squash. We ordered some fingerlings, some Peruvian blues, some baby veggies…..I feel a warm pan salad coming on………..hmmmmmmm….Just ordered in some speckled trout straight from the gulf….these things write themselves!
Okay here it is…Pan seared speckled trout topped with warm brie and grape tomatoes in a fresh herb vinaigrette over a warm summer pan salad including: garlic roasted fingerling and blue potatoes, pancetta, baby carrots, patty pans, asparagus and baby spinach. Summer is here!
